Champagne List:
1. Brut Champagne Napoleon Vintage 1998 $1480
   100% Chardonnay

Appearance: Golden- green glints, characteristic of a Chardonnay with a good maturity. A delicate and persistent foam.

Nose: The nose is large and delicate with notes of citrus fruit, grapefruit and fresh hazelnuts.

Palate: A well-balanced wine to which more than 4 years of ageing in the cellars have given a perfectly controlled and delightful freshness making possible to add only a small proportion of sugar (4.5 g/l) . Even if the Napoléon BLANC de BLANCS could also be considered as an “extra brut”, Champagne Napoléon has rather named it a “brut”.
The wine is powerful, elegant, delicate and silky. It offers a very long duration in the mouth, it lasts a long time after the last sip.

The oenologist’s comments: In order to express all its complexity, this cuvee could be served, as every Great Champagnes, at a temperature of 10 to 12°, as an aperitif or during a summer evening.
It would combine perfectly with a shrimp and grapefruit salad, a white fish carpaccio with a drop of olive oil or a chicken cooked with lemon.
This cuvee offers a good maturity and as every great Napoléon Champagnes, it can be kept a few years in the cellars by the amateurs of old champagne.

2. Champagne Napoleon Tradition Brut $1180
50% Chardonnay and 50% Pinot Noir
Appearance: Abundant and generous foam, regular chains of very fine bubbles.
Bright yellow colour, adorned with tints of old gold.

Nose: The nose is mature, with a dominant aroma of fruit jelly and shades of hazelnut, praline and brioche, combined with toasted notes (roast almonds) and a touch of honey.

Palate: The freshness of the attack gives way to pastry notes and a fleshy fruit sensation.
The light dosage gives this vintage a wonderfully smooth finale.

The oenologist𠏋 comments: This is a mature, well-rounded Champagne that can be drunk as an aperitif or at the table, accompanying a trout with almonds, for example.
